Salvadores Mezcal stands as a testament to family tradition spanning generations. Rooted deeply in the community of Tlacolula de Matamoros, Oaxaca, the brand’s history dates back to the early 1900s when the current producer’s great-grandfather first began crafting spirit from local maguey.

Over generations of meticulous knowledge transfer, the family built their modern Casa Palacios Destilería in 2019 and officially registered the Salvadores brand in 2020 to bring their ancestral methods to the global stage. Every bottle represents a dedication to preserving the craft through high-quality, artisanal production methods.

Traditional Production Methods

What makes Salvadores stand out on the shelf is an uncompromising commitment to time-honored, rustic techniques that highlight the true essence of the plant and its environment:

  • Cooking: Agave hearts (piñas) are slowly roasted in traditional earthen conical pits to develop a rich, complex smokiness.
  • Crushing: The cooked agave is crushed using a traditional heavy tahona stone wheel.
  • Fermentation: Wild fermentation takes place naturally in open-air wooden tubs.
  • Distillation: The mash undergoes a careful double distillation process in traditional copper alembic stills to refine the spirit while locking in delicate aromas.
